The Sauce:

The Noodles:
Korean buckwheat noodles (λ©λ°λ©΄) β at least 30% buckwheat flour. NOT Japanese soba. NOT naengmyeon noodles. Boil for about 5 minutes, then rinse thoroughly under cold water β "μ± μ± μ± μ± μ± !" as Jungkook described β to remove all the starch. Drain well.
Assembly:
Toss cold noodles with sauce. Top with κΉμλ° (gimjaban) β seasoned seaweed flakes. NOT regular dried seaweed. Jungkook was very firm about this: "Not gimgaru! Gimjaban only!!!" Add egg yolk on top and mix everything together.
Perilla oil: Available at Korean/Asian grocery stores or online (Amazon, H Mart). If truly unavailable, toasted sesame oil works as a substitute, but the flavor will be different.
Cham sauce: Look for "CJ Beksul Cham Sauce" at Korean stores. If you can't find it, mix: 3 tablespoons soy sauce + 1 tablespoon vinegar + 1 tablespoon sugar + a splash of lemon juice.

What is makguksu?
Makguksu (λ§κ΅μ) literally means "right-away noodles." Mak means "just throw it together," and guksu means noodles. It's a traditional dish from Gangwon Province β Korea's mountainous northeastern region β made with cold buckwheat noodles, typically served in summer with a tangy, vinegary sauce.
In Korea, makguksu is comfort food. It's what you eat on a hot day when you don't want anything heavy. It's simple, refreshing, and humble.
What makes Jungkook's version unique?
